Apple Pie Macarons

If you always go for the apple pie at Thanksgiving, you are going to love these apple pie macarons!

Inspired by the classic pie, these macarons are filled with a spiced apple compote.

I start with my Perfect Macaron Recipe and add three drops of chocolate brown, one drop of lemon yellow and one drop of orange gel food coloring to get a warm pie crust color.

Just after tapping out the air bubbles, I sprinkle over some cinnamon.  This adds a nice warm flavor and makes the macarons taste even more like a pie.

How to make the Apple Pie Macaron Fillings

This is a two part macaron filling-a ring of white chocolate ganache and a spiced apple compote.  The apple compote is like a mix between an apple sauce and an apple jam.

White Chocolate Ganache

To make the ganache, warm the heavy cream in a pan to a simmer.  Pour the hot cream over the chocolate and let it sit for several minutes.  Add in one drop each of chocolate brown, lemon yellow, and orange gel food coloring to match the color of the apple compote.  Stir until all of the chocolate has melted and the ganache is silky and smooth.  Pour into a piping bag and cool to room temperature.

Spiced Apple Compote

To make the compote, all of the ingredients are added to a pan and cooked over medium low heat until the apples are tender, about 30 minutes.

Next, purée the compote so it is easy to pipe onto the macarons.  I have a Cuisinart emersion blender with a mini food chopper, perfect for small tasks like this.

Pipe a ring of the ganache to form a base and fill the center with the apple compote.  Pair with a matching shell to make a perfect apple pie macaron!

After you have filled the macarons, let them sit for a day or two.  Something magical happens-the filling and the shells merge to form the perfect texture!  Be sure to check out my Perfect Macaron Recipe for all of my baking tips and tricks!

Apple Pie Macaron Filling

This macaron filling is perfect for apple pie lovers! It’s just like a slice of pie.

Ingredients

White Chocolate Ganache

  • 226 grams white chocolate chips or bars cut into small. Pieces
  • 80 grams heavy cream
  • 1 drop each chocolate brown, lemon yellow, and orange gel food coloring

Spiced Apple Compote

  • 2 apples honey crisp, cut into small dice
  • 80 grams brown sugar
  • 1/4 tsp salt
  • 1 tbsp flour
  • 1/2 tsp cinnamon
  • 60 grams apple cider
  • 1 tsp lemon juice

Instructions

Make the White Chocolate Ganache

  • Warm the heavy cream in a pan to a simmer.  Pour the hot cream over the chocolate and let it sit for several minutes.   Add in one drop each of chocolate brown, lemon yellow, and orange gel food coloring to match the color of the apple compote. Stir until all of the chocolate has melted and the ganache is silky and smooth.  Pour into a piping bag and cool to room temperature. 

Make the Spiced Apple Compote

  • Add all of the compote ingredients to a pan and cooked over medium low heat until the apples are tender, about 30 minutes. Transfer to a food processor or blender and purée.

Make the Macarons

  • Make one batch of Perfect Macaron Recipe and add three drops of chocolate brown, one lemon yellow and one orange gel food coloring to get a warm pie crust color.
  • Pipe a ring of the ganache to form a base and fill the center with the apple compote.  Pair with a matching shell to make a perfect apple pie macaron!
  • After you fill the macarons, let them sit for a day or two before enjoying.
