Warm the heavy cream in a pan to a simmer. Pour the hot cream over the chocolate and let it sit for several minutes. Add in one drop each of chocolate brown, lemon yellow, and orange gel food coloring to match the color of the apple compote. Stir until all of the chocolate has melted and the ganache is silky and smooth. Pour into a piping bag and cool to room temperature.
Make the Spiced Apple Compote
Add all of the compote ingredients to a pan and cooked over medium low heat until the apples are tender, about 30 minutes. Transfer to a food processor or blender and purée.
