Apple Pie Macaron Filling

This macaron filling is perfect for apple pie lovers! It’s just like a slice of pie.

White Chocolate Ganache

  • 226 grams white chocolate chips or bars cut into small. Pieces
  • 80 grams heavy cream
  • 1 drop each chocolate brown, lemon yellow, and orange gel food coloring

Spiced Apple Compote

  • 2 apples honey crisp, cut into small dice
  • 80 grams brown sugar
  • 1/4 tsp salt
  • 1 tbsp flour
  • 1/2 tsp cinnamon
  • 60 grams apple cider
  • 1 tsp lemon juice


Make the White Chocolate Ganache

  • Warm the heavy cream in a pan to a simmer.  Pour the hot cream over the chocolate and let it sit for several minutes.   Add in one drop each of chocolate brown, lemon yellow, and orange gel food coloring to match the color of the apple compote. Stir until all of the chocolate has melted and the ganache is silky and smooth.  Pour into a piping bag and cool to room temperature. 

Make the Spiced Apple Compote

  • Add all of the compote ingredients to a pan and cooked over medium low heat until the apples are tender, about 30 minutes. Transfer to a food processor or blender and purée.

Make the Macarons

  • Make one batch of Perfect Macaron Recipe and add three drops of chocolate brown, one lemon yellow and one orange gel food coloring to get a warm pie crust color.
  • Pipe a ring of the ganache to form a base and fill the center with the apple compote.  Pair with a matching shell to make a perfect apple pie macaron!
  • After you fill the macarons, let them sit for a day or two before enjoying.
